Mix up your salad routine with layers of healthy greens and exotic fruits for a healthy colorful twist!

I love to eat a salad every day. To keep things interesting I love to mix up flavors and ingredients in my salad. This antioxidant salad has become one of my favorites. The mixture of exotic fruits not only remind me of my travels but the provides a really interesting balance of flavors to my greens.

You will notice that I don't put a dressing on this salad. I rarely use dressing, why? Because I want to taste my ingredients, not my dressing. By not using dressing, you get in the habit of appreciating all of the organically grown produce in its pure form: AND it’s a lot less calories!

Sweet & Colorful Antioxidant Salad with Dragon Fruit

Serves 4-6 people

The Greens

  • 2 cups Fresh Spinach
  • 2 cups Spring Greens
  • 2 cups Arugula
  • 1 cup Micro Greens

The Fruit

  • 3 Kiwi, sliced
  • 1-3 Oranges depending on size and type, segments
  • 1 large Dragon Fruit (pitaya), cubed
  • 1 cup Pomegranate Seeds

Assembling Salad: Layer your greens in a salad bowl or platter. I like to layer the greens into rows and then top with the micro greens. You of course could toss the greens together. It really depends on how you would like to present the salad. I then like to just layer the kiwi, oranges and dragon fruit on top and then finally sprinkling the pomegranate seeds. And serve. Dressing is optional.
